Ever wonder what to cook / bake for dinner that’s simple, yummy and HEALTHY?
This recipe has all the vitamins needed for your body. From Vitamins A, B, E C, D, K, Calcium, protein etc…. And one more thing…it’s vegetarian..well has no meat but there are eggs..so not vegan….
Kids will love it and can help you make it!
2 cup broccoli florets- rinse well, drain and dry
2 cup cauliflower florets – rinse well, drain and dry
1 frozen Pillsbury Pie Crust
2 TBSP 1% milk
1 cup grated sharp cheddar cheese
1 tsp chopped fresh thyme
1 tsp salt
pepper to taste
1 tsp paprika
Thaw pie crust. Preheat the oven to 400.
While the pie crust is thawing, steam broccoli and cauliflower together until medium tender.
In a separate bowl, whisk 2 eggs with milk, paprika, chopped fresh thyme, salt and pepper. Fold 1/2 of the cheddar cheese into the egg mixture. Save the other half for later.
When the pie crust is thawed, place in the oven for 15 minutes. Remove.
Add the broccoli and cauliflower mixture to the pie crust.
Pour the egg mixture over the broccoli and cauliflower.
Sprinkle the remaining grated cheddar cheese.
Sprinkle with Paprika before baking.
Place in the oven for about 30-40 minutes.
Cool for 10 minutes before serving.
Can be served as an entree or a side.
